Picture the particular taste that arrives when you bite into something — not sweet or salty in general, but the specific character of it: this is strawberry, this is smoke, this is home cooking. Flavour is that character. Once you have the idea of a character you can taste, English extends it to places, stories and moods, which have a character you can sense in the same way.
