One way to hold it: how much something registers from a small signal. A very sensitive instrument moves when almost nothing happens. Point that at a machine and you get precision; at a body you get allergy; at a person you get both the gift of noticing others' feelings and the trouble of being easily hurt.

Built transparently in English from sensitive + -ity, i.e. 'the state of being sensitive'. sensitive itself goes back through Medieval Latin sensitivus to Latin sentire 'to feel, perceive' — the same root under sense, sentiment and consent.
