One way to hold this word: a hot dish just lifted off the stove — salt, onion, herbs, steam rising. Two things sit inside that picture. It is not sweet, and it smells good enough to make you come closer. Every use of savoury leans on one of those two, and the negative phrase works by taking the second one away.
