Picture a hand on something: picking it up, turning it over, feeling how heavy it is, and setting it down again. That hand decides two things at once — whether the thing gets damaged, and whether the job goes well. Every use of handling is really a comment on how that hand is working.

Wiktionary traces handling to Middle English handlinge and Old English handlung, and analyses it as handle plus -ing. The hand is literally inside the word, which is why every branch still describes something a hand does.
