Underneath is a public declaring — you stand up and state what you are. State what you have trained in and can do for others, and the word means your calling; gather everyone who has declared the same thing and it means the whole field; and the older use, declaring what you feel or believe, is still there in phrases like a profession of faith.

From the word’s history

Etymonline: around 1200 profession meant 'vows taken upon entering a religious order', from Latin professionem 'public declaration'. The occupational sense — 'occupation one professes to be skilled in, a calling' — appears by the early 15th century, and 'body of persons engaged in some occupation' by 1610. So the job sense and the declaring sense are one word, not two.

Etymonline 記載：大約 1200 年時，profession 指的是「進入修會時所立的誓」，來自拉丁文 professionem「公開宣告」。到十五世紀初才出現職業的意思——「一個人宣稱自己精通並以此為業的工作」；1610 年起又延伸為「從事該行業的整群人」。所以「職業」和「表白」不是兩個字，而是同一個「公開表明」在不同時代的落點。
