Think of something that once held water inside it — a grape, a , a flower, a fish — left in the sun or in warm air until the water is gone. What remains is smaller, tougher, darker, and it will now sit on a shelf for months without going bad. That whole picture is what dried marks: not simply 'not wet', but 'the water has been taken out on purpose, and that is why it keeps'.
