Picture the book on a student's desk — the one the whole class works from, laying a subject out chapter by chapter, in the order it is meant to be learned. Everything in it is the tidy, standard version, with the mess taken out. Because of that, English can turn the word around and use it for real things too: something is textbook when it comes out looking exactly like the picture in that book.
From the word’s history
Textbook as a compound dates from 1779, meaning 'a book used by students as a standard work for a branch of study'; an earlier 1730 use was for a book printed with wide line spacing so a student could write notes or a translation between the lines. The adjective sense 'typical of a textbook' appears in 1916. Text itself goes back through Old French to Latin texere 'to weave'.
