Hold the word in two pieces: open, plus -er, the one that does it. So an opener is simply whoever or whatever does the opening. Start with the thing in your hand that gets a closed can open. Then notice that a shut can is not the only thing that needs opening — an evening, a season, a conversation all sit closed until something starts them. Whatever goes first is the thing that opens them.

The source traces opener to Middle English oppinnare and Old English openere, which is open plus the -er ending that forms agent nouns. The shape of the word is still visible today, and it explains why one word covers both a tool and a first item: both of them are the thing that opens.
