The core picture is animal flesh on the plate — the solid, edible, part of a creature. Almost everything else plays on one of two felt qualities of meat: it is the substantial inner stuff (vs bone/skin), and an animal either has flesh on it or doesn't.

From the word’s history

Old English 'mete' originally meant food in general; it narrowed over time to animal flesh specifically. The 'most important/substantial part' senses preserve an echo of the older 'the actual food, the substance' meaning.

古英語 mete 本來泛指「食物」，後來才縮小成特指「動物的肉」。那些「最重要、最實在的部分」的用法，其實還留著舊義「真正能吃的料、實質內容」的影子。
