A picture you can hold: a tall narrow shaft standing upright inside a building, open at the top, with smoke from the fire below climbing up it and out into the sky. Two things make it a chimney — it is a vertical hollow passage, and something rises through it. That shape, upright and narrow with walls close on both sides, is what all the other meanings borrow.
