You can picture an assistant as the person standing beside the main one, taking the smaller jobs off their hands so the main person can carry the rest: someone whose whole role is to help. Whether it's a at work, a shop worker serving customers, or a job title one rung below the top, the same picture of 'the one who helps alongside' runs through it.
