Something is carrying a load, and you take the load off it — the truck, the ship, your arms are now empty and free of the weight.

有個東西身上「載著」重量——卡車滿滿一車貨、船艙塞滿箱子、你雙手抱著一堆東西——而 unload 就是把那個重量一件一件搬下來，讓載具回到空的、輕的狀態。un- 是「解除」，load 是「載的東西」，合起來就是「把載的解掉」。所以這個字的重心其實有兩頭：東西離開了，而載它的那一方鬆了一口氣。英文很多用法都是從「鬆了一口氣」那一頭長出來的。
