Uncharted describes a place, or a situation, that nobody has explored or mapped before — you don't know what's out there. It's often used literally about land or ocean ('uncharted waters'), but even more often used figuratively about a new, unfamiliar experience, as in the common phrase 'uncharted territory', meaning a completely new situation nobody has been in before.
