To ionize something is to turn its atoms or molecules into ions, or to make that happen. A gas ionizes when electrons are pulled off its atoms, often by a strong electric field or by certain kinds of radiation. Chemists and use this verb in the lab; you will not hear it much in the street. British English often ionise. The related noun — the name of the process — is ionization.
