If something is gelatinous, it sits in a state between solid and liquid, like a gel or like jelly: it can hold a shape, but if you press it, it wobbles, slides, or sags. We use it for food (a thick soup that has cooled, a dessert) and also for textures people do not like — a gelatinous blob in a pond, or tissue in a science class. It is a slightly formal, slightly science-y adjective. In casual talk people more often say “like jelly” or “gummy”.
